My friend and I decided to take a day off from our Bluewalk.com walking tour of Nice to join Rosa for a full day of exploring the market and cooking an amazing lunch. Rosa met us early at a coffee shop and after a lovely introduction we went to work learning about all of the fruits and veggies, cheeses, oils, meats, fish and poultry. After getting the necessary ingredients, we proceeded to her lovely home where we (4 students) shared in the responsibilities of food preparation. We learned to make squash soup, roasted peppers, aubergine oliviera (an eggplant dip with yogurt and goat cheese), duck breasts with chestnut honey and roasted figs, panisses (a mock french fry recipe using chickpea flour) and strawberry gratin. With this we had cheeses, breads, and wine. The food was outstanding and Rosa was a most gracious teacher and hostess. She even altered the menu to accommodate my gluten-free needs. I highly recommend this adventure in shopping, cooking and eating. Rosa really does rock!
