Michel Sarran is not just a great chef, he is an artist whose work rarely lasts more than moments but remains in the memory for a lifetime. We spent a long, lovely evening enjoying one of the very best meals of my life, no small thing for a man of 72 years. From the outside you would expect a nice place to dine, but you might not guess you were entering food heaven. The flawless service started as the door opened as we stepped from our taxi and never diminished from that level. The little amuse bouche with the tubes of truffle paste to put on little toasts gave a hint of what was to follow. I asked the waiter for recommendations and he provided me with wonderful things, the Soupe de foie gras, the pigeon du Mont Royal en kadaif, and les Fromages de Xavier. My wife had the same soup, the Porc Noir de Bigorre mignon en cocette au thym and the Fraises et fraise des bois en coque croustillante. Wine must accompany such a dinner, and I left myself in the hands of the sommelier who selected perfectly matched wines with each course. To end the evening I had a Café Moka and a very pleasant chat with the master himself who personally thanked us for spending our evening in his establishment. It was a privilege to have such an experience handled with grace and perfect professionalism by every member of the staff. This is not an inexpensive place to have dinner, and there are many wonderful places in Toulouse, but if you want art as well as delight, this is the place. Michel Sarran is a genius in the kitchen, and opportunities like this do not come often, so enjoy and treasure the memories.
