I travel regularly to Paris and was very impressed during a recent stay at the Plaza Athénée.
The building is a successful mix of Art Deco, Art Nouveau, classic French style and modern elements (bar, main dining room). The hotel has been gradually redecorated but has kept its charm.
The room (Deluxe) was superbly equipped (advanced lighting system, 115 TV stations, 24 radio stations, CD) and had a view of the gorgeous inner courtyard (fountain, singing birds). The bathroom, also with courtyard view, was in brown marble and had a separate shower, excellent toiletries (including the often forgotten hair conditioner and bath salts) and a connection with the radio/CD.
I tried different options for food and drinks: a light lunch in the intimate gallery, lunch at the beautiful Relais Plaza (very ritzy and an Art Deco gem), unusual drinks at the bar (great staff). If you do not want to spend a lot of money at the main restaurant (Ducasse), you can have breakfast there. Continental breakfast (expensive: 35€) is very good (e.g. rose jelly from Hédiard), there are plenty of à la carte options and the dining room is worth a visit.
The hotel also has a large fitness room (situated in the former English bar) in very elegant surroundings. There is a small area with saunas (wet and dry).
The level of service is consistently very high and the staff also make an effort to establish a personal contact with the guests. The atmosphere is elegant, traditional but modern, with an incredible sense of detail. In my experience, the best in Paris (at a price) with the excellent Hotel de Crillon.
