We traveled three weeks in mostly western Ireland. We stayed two nights in Westport (fun town, by the way) and we ate at Sage both nights. Every dish was original and full of imagination. Tender lamb steak, succulent rabbit, and Guinea Fowl with apple and raisin stuffing that was out of this world. Every dessert was brilliant. We were never rushed (which some here apparently find annoying), given suggestions that complimented our meals perfectly, and were treated with warmth and humor from the hosts and staff. Our only regret is Sage is not closer to us, because we'd eat there on a regular basis. We look forward to returning to Sage, and Ireland.
