“Hilma's was our favorite experience in St. Maarten”
Hilma is the queen of her castle, and is a delightful character. Her unique restaurant with four bar stools at the front end of her little trailer attracts a wide variety of locals, expats, and tourists. Some folks stop in for food to go, while others sit for a while to sample her daily specials, enjoy "Dutch coffee" (Heineken), and engage in philosophical discussions. She always has a variety of johnny cake fillings, savory "patties", and a soup of the day. Her conch soup is especially satisfying, but it's also a special occasion--she lets her regulars know ahead of time when she's planning to make it, so it's gone early in the day. Our only disappointment is that when the food runs out in the early afternoon, she closes up. We were in St. Maarten for two weeks, and made sure to stop by Hilma's at least once a day for a snack, a meal, or to simply have a beer and chat. She doesn't have a full bar by any means, but we did see her fix up a couple of drinks with spirits. I clicked "beer and wine only", but I don't think she serves wine.
