We stayed three nights with Paul and Val. Yes, this is a B&B, but it is also so much more. Aux Quatre Saisons is located in Axat, a simple but well-appointed village nestled at the bottom of a gorge in the Pyranees. The location is visually dramatic (you may wonder what you're getting yourself into as you first arrive through the narrow rocky roads) but incredibly convenient for visiting this unique and magical area. During our short stay we were able to visit castles, fortified cities, vineyards, beaches, the capital Perpignan and countless pretty villages, all the while soaking in the diverse and often mindblowing scenery.
We stayed in the Chambre Jardin, a small cottage around back of the main house. It was quaint and cozy, though quite comfortable, with a private deck overlooking the garden where we could sit and chat. There was a small fridge that was stocked with complementary water and beer, as well as some fresh fruits. The bathroom is quite large and was very clean. They provided an air conditioner, but we had no use for it. Before arriving I was a bit concerned about noise, but this proved to be completely unfounded. It was beautifully quiet both in the room and out.
Guests eat breakfast and, if they choose, dinner in a large central space in the main house. Paul and Val offer a simple but filling breakfast during which guests mingle and trade sightseeing tips. This is also the best time to get information from the hosts, who have an exhaustive knowledge of the area and will gladly help you plan out an itinerary for the day.
Up until now this sounds like a perfectly charming B&B, which would be enough to satisfy most anyone. However, the real highlights of our stay were the two dinners that were prepared by Paul. For an additional (and criminally modest) fee, you can have a delicious multi-course meal complete with aperitifs, wine and after-dinner drinks. We had two lovely evenings, replete with lively and engaging conversation and plenty of laughter.
I could go on and on, but I will just say that Paul and Val really went out of their way to make our stay very pleasant. The ambiance of warmth and hospitality was something really special that will not be soon forgotten.
