Fact: it's not uncommon to wait 45-60 minutes for a popular brunch spot in Montreal. What I liked was that Maison Publique will take a mobile number and give you a call, so you can enjoy a walk around the neighbourhood. Good thing, since the entrance area is not particularly spacious.
Service: Was friendly enough and reasonably quick.
Vibe: Extremely hipster including a few groups with a stroller. But fun overall.
Food: Almost great. I had the boudin with eggs and the boudin was fantastic. Served with two sunny-side up eggs on top, it could have been hotter. It was served with two very sad small pieces of depanneur-grade baguette. Really? For $15, cheaping out on the bread is just bad form. Of course you could get toast and jam for an extra $4, but really, a decent portion of toast to accompany the meal is basic. But the boudin mostly made up for this although for the price, I would have liked a larger portion.The other dish we ordered was the herring with poach eggs. It was apparently good and a more reasonable portion, with one fat piece of white bread toast that looked like home-made bread.
Value: With plain coffees, it was $24 each with tip. At the time I didn't mind since I don't mind spending on a good brunch however in retrospect, this was not worthy of its price, when you consider the cost of the ingredients OR how much other brunch spots putting out good food charge. For that price range, I want either far more elaborate dishes, or a ridiculous quantity of food.
Potential: The ambiance is young, fun, the food is basically good, but they need to get the formula right and increase the perceived value/price ratio - don't cheap out on bread or portion size. If they are looking to help the bottom line, drinks (mimosas, bloody marys, irish coffee) would be a fair way to encourage people to spend a little more without feeling like they are spending way too much on eggs. Personally, I don't mind the amount I spend so long as I really feel like I'm getting my money's worth.
