I had a 10am-1:30pm class with Nicolas Dutertre a chef from Point G (unfotuntely I forgot the name of his sous-chef that was there also). The class was called 100% macarons du Point G and was given in French. It had 12 participants.
First, he demonstrated how to make various fillings for the macarons like a ganache and a caramel filling. Then he demonstrated how to make the actual macaroons. Throughout the whole thing he was giving us little tips and tricks to do the macaroons correctly. During the demonstrations he also called a few volunteers to help him with the cooking
For the last 1-2 hours, we all practiced making the macaroons themselves along with the fillings. We then practiced piping them onto the trays and then practiced filling them too.
Throughout the whole class we were given samples of everything that was made and wine was provided also. At the end, we were all given our macaroons to take home with us.
For anyone who likes macaroons I would definitely recommend this class if you've ever wanted to make them on your own. Yes, the class is a little expensive, but it is worth the money if macaroons are something you enjoy. I would recommend the class to others and will definitely be going to other classes at the Guide Culinaire.
