Ottawa has the highest number of Pho restaurants in Ontario. I guess this has to do with the reasons: (1) easy to start up (2) menu easy to handle in kitchen (3) You don't need lots of training time to be a good pho chef.
The soup base for pho is the most important thing. If a Vietnamese restaurant can't do a good soup base for the pho, this restaurant is expected to survive since there are so many to compete with.
I believe that the chain of "Pho Bo Ga" restaurants on Somerset street all come from the same family (Pho Bo Ga, Pho Bo Ga LA, New Pho Bo Ga LA, Pho Bo Ga 3). They are owned by the three brothers who were trained their sister in LA (for 3 months). After they learned to make the soup base, they opened the restaurants one by one. All the brothers are doing pretty good. They are driving nice Luxus SUV, nice Ferrari parked in front of their restaurants.
Anyway, the pho is not bad and it's healthy. I don't feel thirsty after eating there. But our friends did have problem with MSG after eating there.
