When it comes to hand-crafted, "upscale", thin-crust pizza places, Calgary has more choice than ever before (Una, Famoso, Pulcinella, Without Papers). I was very impressed with WOP's menu - a great selection of appetizers, pizzas, calzones, desserts, and drinks.
I was surprised to learn (from the host) that the restaurant name is supposedly the definition of "wop", the pejorative racial slur for people from Italy. "without papers" = Italian immigrants without identity papers (according to Urban Dictionary, this actually isn't the correct origin).
I ordered the olives as my appetizer. Wow - they were the best olives I've ever eaten! At least 6 different kinds (including sun-dried Turkish olives) and they were served WARM - so delicious! My pizza was delicious too. I like WOP's pizza crust much better than Famoso's (theirs is a bit too doughy for my tastes).
One tip: ask for table on the perimeter. These tables have chairs with backs. The "inside" tables all have stools - not very comfortable.
