Owned by one of Canada's Top Chefs Charcut is a new turn on the classic Calgary steakhouse. Try the Charcut appetizer platter for a superb mortadella, Classy, urban ambience right in the center of the city.

I love charcuterie and I was so hoping to enjoy dinner at Charcut, unfortunately not. Each dish seemed an exercise on "how can the chef put his personnal touch on a classic.... and mess it up". Cocktail was a classic "Dark and Stormy", in which you expect a nice taste of dark rum with a strong kick of ginger, however in this case it was neutralized by the addition way too much caramel sauce/syrup. The plate of porchetta was almost unseasonned, The worst was the poutine: every trick used to "improve" / "put a classy twist on" the dish offset the taste. The duck fat for the fries produced a strong after taste, the cheese curds were good but lacking (good poutine has curds on the bottom of the dish also), the truffle gravy was Way too strong with the truffle and garlic overpowering everything. For the same type of dinner (modern interpretation of rustic food), le Pied de Cochon in Montreal has achieved the perfect balancing act, unfortunately Charcut does not live up to its reviews.

“Great local food, great local restaurant”

An interesting menu served with the best local food... Really interesting and delicious appetizers.... Steak was great, and if you like poutine, is restaurant raises this to a whole new level (almost every table had it around us)... But don't be confused, this is not cheap pub food! But the best fare you can imagine...

“Eclectic, pretty good”

Based on the name, and the Calgary context, I expected pure steakhouse, but CharCut is more interesting than that. I seem to recall that there was only one steak on the menu, in fact. Some unusual choices, especially for appetizers, and very good stuff.

“Fantastic food, great service”

We were staying in the Le Germain hotel and chose this for our last dinner before heading home the next day. On a Friday night the place was buzzing. Our waiter demonstrated extremely unobtrusive excellent service, a real pro. The food was excellent, the home cured mortadella was amazing and the rotisserie chicken delicious. My wife's whole fish was excellent. I'm salivating writing this review. Highly recommended.
