If it wasn't for the pizzas cooked in a very nice wood burning oven, this place would be categorically a disaster.
The food was moderately embarasing in term of execution. The flavors were there, but plating, portion ratios, cost... all off base. To be fair, I have very high standards, as my wife is a very successful chef, but I'm also very fair and objective.
I had ordered two apps, the scallops, and the Wasabi tuna. Both portioned rather amateurishly.. and servered on a bed of Julianned veg. You could literally do this at home in 5 minutes and come out with the exact result. Chop carrots, apply salad dressing, cook seafood for three seconds, plate. Save yourself the money.
One more negative note, and extremely simple to fix. Its summer in Banff, and It has been a wet one at that. That being said, the mosquitos are out in abundance, and they leave the doors wide open. Please... we understand that you leave the doors open due to the heat put out by the pizza oven...so invest in a few screen doors! I've never seen so many people simultaneously smacking themselves as they try to enjoy dinner.
On a positive side of things, the pizza and flat breads were masterfully cooked and seasoned, easily the best pizza I've had in town, and I've had them all. Thanks to the young lady sweating it out for our enjoyment, she saved our experience all together. Awesome pitcher of sangria available as well. I hear nothing but fantastic things about cilantro, so maybe our experience was a one off... ill give it one more shot before writing them off completely.
