My wife and I, along with another couple initially booked the RIU for late August. However, after reading the reviews here we 86'd that hotel. I will say during our stay we visited the RIU and were impressed, leaving the resort saying we would have been happy there as well.
Now on to the Rose'. My wife came across a great deal on a presidential suite (2bdrms) for the week for a grand, we couldn't pass it up. Very nice hotel, a bit older but well kept with great customer service and extremely clean. One of the best things about this resort is the location. We could walk down the beach to the beachfront restaurants (go to the office for dinner) as well as walk into town if we chose to. Great pool, with great service. I'd advise you to get to the pool and put a towel down before 9am. Cabana's are first come first serve, we got one by leaving towels down at 8am (when the towel booth opens).
Our rooms/dishes/etc. were cleaned everyday. A/C worked very well and the shower water pressure was awesome. I really don't have complaints about this hotel. We'd stay there again.
About Cabo: I'd say a typical Mexican town. Some descent shops, mostly repetative items. The restaurants were good, we ate Mi Casa (mexican) Restaurant (they have a seafood one as well), Poncho's grilled up our Tuna we caught, Lorenzillo's was a nice upscale restaurant my wife just had to dine at one night (Lobster Thermador was great). By that time we were craving American food and hit Johnny Rockets, then Hard Rock (good burger).
Weather: Awesome, but damn it was hot! We made dumb decision to walk into town the afternoon of our last day to shop, crazy hot! Go in the morning if you have to get the shopping out of the way early, then head back to your pool at this time of year.
Fishing: My buddy and I and his wife chartered a 28' boat from ABY Charters. Helio was very nice and helpful. He had the best deal we could find at $300 for a 1/2 day (6:30 am to noon). Ryan caught a nice Tuna, and I pulled in a Skip Jack. We locked into a Marlin early but it go off. Dangit!!!
The only negative I can even come up with is the four of us were popping Imodium AD like it was coming out of a Pez dispenser. Ryan couldn't leave the room one day it was that bad! It's either the water which we brushed our teeth with or the local fruit. Either way, if possible I'd recommend pre-medicating prior to arrival to be safe.
A real plus here is the option to take the free shuttle to the other Pueblo Bonito resorts. We hit the Sunset resort one day and wow it was nice. Overall, the Rose' was 3.5 to 4+ stars, but again a very nice hotel and stay.
