As former head chef at a two Michelin-starred restaurant, Thomas Carr knows a thing or two about the highest levels of culinary excellence. Born and bred in Devon, Thomas is committed to ensuring that, where possible, everything is created from scratch and made onsite. Growing up here he developed an enthusiasm for exploring local producers and food traditions, something which is translated into the produce on offer at Coach House.
Thomas also has a keen interest in the environment and sustainable food practices, showing great support to the local suppliers on whom he relies for the finest seasonal ingredients - vegetables grown by local specialists, fish from family-run fishing boats and meat from neighbouring farms.
Sourcing produce locally, such as crab from Lundy Island or duck from the farm next door, helps Thomas and his team ensure that every dish served has as few "food miles" as possible.
Therefore, not only is your food fresh and tasting fantastic, our carbon footprint - and henceforth impact on the environment - is reduced. Thomas maintains that whilst "Cornish crab" or "Somerset pork" may be fashionable phrases, the same ingredients, sourced locally in North Devon, are impossible to beat.
In short, the Coach House Restaurant is directed by a chef whose obvious talent, skillful innovation and total love of food ensures an exciting, rewarding and cutting-edge dining experience to savour and remember. Thomas is fast becoming famous for his work and in February 2014, he teamed up with well-renowned chef Michael Caines MBE for an evening of fine dining, sharing the creation of an exquisite six course menu.
