After reading reviews on Tripadvisor I decided to give Carboncitos a go. We were a group of four friends for dinner and we got a seat close to the street. Having read about drinks being served on the heads of the waiters we decided to start the evening with a few margaritas of different flavors. They were indeed festively served in nice glasses on the head of the waiter and they tasted good enough for the recreational drinker. There was a mix up with the flavors of the margaritas and the waiter first refused to change it, but he later came back with an extra margarita of the right flavor on the house to rectify the problem. This hence delivered on the promise of the management posting here on Tripadvisor stating that problems would be fixed if mentioned to the staff, although it would have looked better without the initial refusal.
I had the cabeza de chancho from the Mayan section of the menu and I liked the dish a lot. I asked for a glass of house wine (Chilean) to go with it and it was excellent. One of my friends had a chicken burrito, but was less impressed with it having had quite a few during the week in Playa. Being quite fuzzy about restaurant, we were torn between rating the restaurant as a 3 or a 4, but I will go with the 4 representing my own experience. It is my impression that there is a lot of inflation in Tripadvisor scores in Playa with everyone giving 5 everywhere, but I decide to reserve this grade for something that stands out exceptionally and I have had other equally nice meal experiences in Playa for a similar price.
Overall, I recommend anyone spending a week in Playa to eat here at some point, it will be a nice experience.
