We stayed at Ventanas del Mar for 4 nights in April 2007. It was by far the highlight of our trip, and we plan on returning to stay again. Although Cozumel is such a huge vacation spot for cruise ships, you would never know when you are at Ventanas. It is located on the sparse east side of the island where there is no electricity, which I think helps keep the crowds at bay. However, that being said, the hotel runs on wind power, and this in no way impacted the comfort of our stay (in case that makes you wary).
You feel as if you are the only person in the world, with a beach, although public, that is basically empty except for the hotel guests. They were building a small bar on the beach when we were leaving, using an unused part of the hotel, however, it seems small, and as this hotel is truly isolated, I can't imagine it will draw a crowd.
The staff was excellent, and truly nice and friendly and were more than happy to talk to you about the unique history of the hotel, as well as the plans to possibly raise sea turtles again on the beach with the help of a biologist.
One of the best parts, was the full breakfast in the am, which is served to you in a screened in eating area, with fresh flowers on the table every morning. The food was fantastic, and often there were choices to pick from. It was just as good, if not better, than any restaurant we went to.
Our room was spacious and clean. The bathroom was small, but nice. We stayed on the 4th floor to get the best view of the ocean, but it seemed any room has a view. There was a large deck, that we shared with one other room, but we never saw anyone else on it. In the room, you felt as if you were literally on a ship, as when you looked out all you see is water. Looking down you can see the rocks and just listen to waves crashing. The waves do crash, and the wind does blow. I am a very light sleeper and found that earplugs actually helped me sleep as I was not used to hearing the waves so close! There is no AC, but you don't need it (and I like my AC).
Finally, there is a great place to grab a drink a stone's throw from the hotel, called Coconuts. It sits on a cliff so you are looking out over the sea while you eat. Food was great and the margarita's large. It is not expensive, but it is not cheap, (maybe like $8-10 a meal). Worth it!
