Put Buccanos on your "must-visit" list! This is, by far, the most interesting restaurant on Cozumel. Serving dinner on only Fridays and Saturdays, chef-owner Ines Falkenburg prepares creative, innovative, ingredient rich dishes using - among other things - fish caught by her staff right off their beach on the north end of the island (outside the Marine Park). (You scuba divers will note that Barracuda Reef is just offshore.) Most dishes have some unusual (for Cozumel) ingredient, making her concepts wonderfully interesting.
The service was just outstanding; I suspect the teething pains noted by other reviewers have been addressed and corrected. We were greeted in person by Anne Malatchi, the hostess/manager and shown to our table. She went to the trouble to tell us about the restaurant, and then the chef personally came over to tell us about the dishes of the day.
In addition to all the great experiences noted above, the setting - on the beach - is just beautiful. If you go, sit outside and enjoy the sunset.
I highly recommend Buccanos - and will be personally returning on each of my trips to Cozumel!
PS: Check their website for periods during the low-periods of the year when they might be closed.
