The highlight of our 7-day vacation in Cancun was having dinner at El Conquistador Restaurant on September 9, 2013. Our server, Pedro Blas, provided the best meal service at any Cancun restaurant that we visited. Pedro helped us make excellent food and drink selections and ensured that everything we ordered was exactly what we wanted. Chef Jose Wiz Fernandes prepared his unique recipe for red snapper on a bed of tempura zucchini with a sweet potato puff on the side. This dish was baked to perfection! The presentation of the entire meal was outstanding. We had the opportunity to compliment Chef Fernandes when he came to our table. The maitre'D, Jesus Castillo, and his staff worked well together to provide an exceptional meal. We hope this staff can work together for many years.
