I had never taken a cooking class in Oaxaca. In fact, this was my first trip to Mexico and Oaxaca. I feel that I really lucked out with Pilar. The trip to the market, La Merced, was very informative and we met the vendors and Pilar explained what she was buying and what is was for. Back at her beautiful home, we all participated in preparation of the meal. There were 10 people that day-a larger class, but we all got to participate. Everything was wonderfully organized for the cooking with the ingredients all laid out by her assistants on beautiful trays. All we had to do was add the items we had purchased at the market and get busy. It was well-thought out and when we sat down to enjoy the meal, it was marvelous. After the meal, we had a mezcal tasting and Pilar showed us the way to taste and enjoy mezcal. I highly recommend Chef Pilar's cooking class. It was a wonderul experience and I look forward to trying some, if not all, of the recipies when I get home. We got copies of all the recipies and her website has many more. She explained what we might substitute if we could not find the exact ingredients called for.
