Read about this restaurant, the chef had worked at Pujol, then at Le Bernadin in New York and returned to Mexico city to open his own restaurant. French based with mexican interpretation.He goes to the market each am and sets the menu based on the ingredients available. The menu was one sheet, it was hard to choose, eveything we ordered was absolutely excellent. The chef was able to come and talk to us and explain the dishes. If you want to go, you MUST phone for reserves, this is a hot restaurant. If you want to top off the evening, walk 4 blocks to Felix bar, also in Roma. Another very cool and happening spot.

“Great food no pretense”

This is a charming place. Welcoming hostess. Excellent food. Chef /owner used to be a Chef at Pujol. Food has the finesse of Pujol without the fussiness. Interior is simple not designed to impress but to be homey. We had an intriguing salad, a perfect fish preparation followed by a light - believe it or not! - pork confit. If you want a great meal with no pretense this is the place in Roma!

“Excellent, the Kind of Restaurant You Would Want in Your Neighborhood.”

I am pleased to write the first review for Maximo and I am confident that many more raves will follow. I have already been here at least 6 times and have recommended it to a great number of people who have all been quite enthusiastic about their experience there.

Maximo is a neighborhood restaurant in the very best way; service is friendly, prices are quite reasonable, and it has already attracted a number of regulars. The design is purposely minimal with candles providing much of the illumination. In a short time these candles have added patina by sooting up the white walls, perhaps a happy accident but I tend to believe it was the designer's intent and it works. Most diners seem to prefer sitting away from the kitchen door which emits a little too much glare. I suspect it is a problem that will be corrected.

Gabriela tends to the dining room and she is terrific. She is a charming, gracious, entertaining host. Her English, by the way, is excellent. Part of my reason for sending friends to Maximo is knowing that they will be well cared for by Gabi and her staff.

The ever-changing menu is not extensive but more than enough choices. Everything is exceedingly fresh, well-prepared, and nicely presented. Nothing, however, is fussy or precious; sophisticated, yes; pretentious, no. The chef, Eduardo, is formerly from Pujol.

Just writing this is making want to go back...tonight.
