Description: Thirteen Sioux tribes, a thousand rituals, one magical place: Santa Fe, New Mexico. The catholic missions arrived in the area of Albuquerque & there the legend was born. The Great Sioux Chef, whose names means the mix of two cultures & the birth of a third: the pagan religion, we honor this at Santo Coyote. It is a place where the Creole cuisine, great wine, & a great atmosphere, converge to create the true host.

“amazingly beautiful place!”
5 of 5 stars Reviewed June 14, 2014

was recommended by a friend and we were not dissapointed at all, the place itself is an adventure in design, art, every nook and turn has something new to discover, really beautiful!!!! We were told the food was not great, but actually really liked our choices, though not the best ever, not at all bad. Very nice attentive service. A bit pricey, but well worth the experience of seeing all the visual delights! Do not miss it if you go to Guadalajara!

“Real Regional Food”
4 of 5 stars Reviewed May 28, 2014

So, friends of the family chose Santo Coyote. Great Valet parking, although we lucked onto street parking right on the corner. We had our usual Campari rocks, while waiting for the rest of the party. A very nicely decorated and fun place, with lots of space, and a stage (although we were there on a Sunday with very little business. Five of us for a great dinner and to celebrate our next to last night in Guadalajara. The appetizers were very tasty, and my Tuna cooked to perfection. Stayed with Spanish White and Spanish Crianza Reds. Passed on desserts, as we were too full from all of the food. We will go back for a show, as they said it creates a whole different ambiance. All the places we went to were recommended by locals

“Great ambience”
3 of 5 stars Reviewed May 28, 2014

It's hard to beat the unique atmosphere and decor. This is a huge restaurant that features many folkart pieces around its sprawling location with an emphasis on the coyote. Fresh salsa is prepared at your table in a traditional molcajete. Some staff are bilingual. Food was disappointingly average for such a unique locale. Tried the coconut shrimp which seemed to be heavy on the coconut and slim on the shrimp. Ceasar salad was served as 3 large lettuce leaves with shaved parmesan on top and a lacklustre dressing. Worth the visit to see the location but not for a great food experience. Bar scene is hopping late at night with hipsters.

“For a Mexican experience in food.”
4 of 5 stars Reviewed May 6, 2014

Time for a late Breakfast or Early lunch and my host in Guadalajara took us here. They have Valet parking for a minimal cost so that saves a parking issue, the hostess that showed us to our table was non conversational (either in my English or my friends Spanish). The other hostesses at the front seemed happier. The building has an open courtyard and you sit either inside looking into the courtyard or in the courtyard fringe under a canopy. The entire building has a Cowboy/Mexican type styling.

Once we sat the service beyond that was fast and friendly, and with a large number of food stations you can pick from a whole range of Mexican food. My friend remarked that the quality of the dishes was made with better ingredients and most things could be cooked or made to order. There were many meat dishes, as well as some roasted/boiled cuts, types of tortillas, fresh salads, omelets, fruits, juices and crepes made to order. For a way to sample a large range of Mexican dishes for what is an very affordable price, the Coyote experience is one to take.
