While in St. John, (during Carnivale), we visited this restaurant for dinner. We were immediately seated in a private corner for two, very nice and private. As expected, the service was a bit slow as the place was packed and there were a couple of large group tables as bookends within the locale.
The wife ordered the Rhumb Lines Salmon. A grilled fillet with a ginger-glaze, gingered veggies and due to allergies, she chose the garlic mashed potatoes. I opted for the Cuban Mojo Pork, a "garlic and citrus juice marinated" pork tenderloin. It came with the garlic mashed potatoes and grilled veggies! These dishes came as recommendations from Emily our server. She hit the mark! These two dishes could not be improved on because attempting to do so would ruin them. The Salmon was cooked to perfection and the citrus-ginger glaze added a very nice dimension to the dish. The veggies had all the right spices without overpowering the main element and the garlic potatoes in the background rounded up this parade of flavors and textures. Very nicely done!
The Cuban Mojo Pork stole the show! Tender, lean, and the flavor was definitely not lacking in this dish. As with the Salmon, the grilled veggies and the garlic mashed potatoes brought home the rest of the flavors an textures. Definitely worth the time and money invested in the dining experience.
