Colette, the relatively new owner of Island Blues, has hired two new chefs and has made a big difference in the quality of the cuisine. My husband and I ate there several times during out stay in Coral Bay in Dec/Jan 2012/13 and enjoyed every bite. The conch fritters are the best on the island (we've tried them everywhere in Coral and Cruz Bays, except the very high-end restaurants like Asolare where one is expected to dress up, not our idea of vacation) and the remoulade that Chef Ricky serves with them is outstanding. The pork dish was wonderful, fish and chips are really good, and the touch of New Orleans was just right. This is a bar, sometimes with karaoke, sometimes with live music, as well as a restaurant, but watching the moon rise over the hills of the East End and Coral Bay makes up for some of the singing. We will go back next visit to Coral Bay.
