We like Jimbo's, primarily because of the man himself, and go at least twice during the two weeks each year we visit SXM. He's always there when we go, and often comes to sit with us briefly at some point during the meal. For some this can make up for the frequent less-than-attentive service. As for the food, well you pretty much have to expect average fare for a place with such high turnover, not unlike most other places on the Simpson Bay strip. On the other hand, nothing is bad at all, and some dishes rival anything you can get at a Tex-Mex place back home. Although the nachos were tepid and the salsa quite mild to our taste (just ask for some Tabasco or Crystal, since the many wonderful local hot sauces are not to be found here), my girls were impressed with the chipotle crab cakes or caesar salads, before tucking into and savoring 'the best hamburger on the island.' My wife and I have always liked the fajitas (especially the steak) and found them mouth-watering and not bad value - we found the tortillas offered were generous in number, unlike many other such establishments. And while the wine list is pretty short and thin, there is a very good selection of beers. If you don't have a reservation go early since it fills up fast after 6:30 or so most evenings. If you go in with your eyes open, you shouldn't be disappointed.
