Not everyone's an airplane geek, but it really doesn't matter. My wife went to Maho Beach to humor me and by the time she left, she was glad we went - she had a great time. It's one thing to look at pictures, it's another to literally stand directly under an A340 as it passes 20 feet above your head, or to sit directly behind a 747 as it literally blows you into the water. It may sound ridiculous, but these are as good as any amusement park ride. Everybody on the beach is laughing and cheering after a big landing or takeoff like that.
When you leave, you may say to yourself "once is enough", and we did too. Five days later, we were back again for one final time.
As for the beach itself, it's really not much of a beach, but it is just really interesting to be swimming in the water or sunbathing like you're on any beach and having these planes flying right over you. The beach itself is small, quite steeply banked and there can be a pretty strong undertow. I can't stress it enough - the planes are the reason why you go to Maho Beach, not the beach itself. If you just want to go to a beach, go to Mullet Beach 500 feet away - it's a better beach and it has no planes (though you can still see them, just a bit further away). The St. Maarten government obviously knows this is a tourist attraction because they rebuilt the beach after it was destroyed by a hurricane a few years ago, despite it being one of the lesser beaches on the island.
Maho Beach also has the Sunset Bar and Grill, which capitalizes on the planespotting with a souvenir stand selling t-shirts with slogans like "get blown" and "watch out for your beer" on them, if you want a memento of your being sandblasted by a 747.
Really gives the nonsensical Blur lyric "I got my head shaved by a jumbo jet" some context.
Tip: the best takeoffs and landings seem to be in the afternoons, and on or just before weekends. When we visited the second time on Monday, the KLM 747 wasn't flying and the arrivals board at the Sunset bar was a lot thinner in general.
