Description: Perched high up between the Piton mountains, The Boucan Restaraunt is open to both residents and non residents. Boucan is The Hotel Chocolat’s own restaurant, where guests can experience Cacao Cuisine. The word “Boucan” refers to the traditional West Indian name for a cocoa drying facility. The restaurant is built on the site of the Rabot Estate’s original Boucan. Boucan is also linked to “boucaneer” or “buccaneer,” the local pirates that would smoke and dry their food to preserve it for long trips at sea. The Boucan offers a strong connection with cacao and chocolate. For over 3,000 years, cacao has been used as a savory ingredient and for 500 as a sweet ingredient. The menu explores both, with the chefs taking their inspiration from the fresh cacao growing all around the estate, together with amazing local fish and seafood, salad leaves, vegetables and plentiful fruit. However the cuisine is far from cocoa heavy. The menu often makes use of cacao as a light, subtle spice or as an infusion. The desserts make full and imaginative use of the estate cacao, with each evening meal rounded off with the day’s new chocolate creation. Boucan’s breathtaking minimalist design includes a soaring roof inspired by the shape of the cacao tree, with its branches reaching to the sky, and shaded by the lush rainforest canopy. Its high platform is a centre stage for the Big Nature views all around.Dining at the Hotel Chocolat's Boucan Restaurant, whether it be breakfast, lunch, dinner or the fabulous sundowner cocktails, is an experience to be shared and cherished.We passionately believe we are certainly offering something very different at Boucan. The dress code is smart/casual and ladies a cocktail dress is never out of place!

Loved the culinary concept of cacao infused in nearly every course. Everything was fresh and local. Staff was friendly and attentive. Open for breakfast, lunch and dinner. If you are staying at the hotel, I strongly suggest you try each meal there at least once.

“BBQ BLISS”

My husband and I visited Boucan during our honeymoon from a recommendation from our taxi driver (Peter D - BEST DRIVER ON THE ISLAND!!!!) We actually went on their BBQ buffet night and were presently surprised! We loved all of the BBQ choices and the white chocolate salad dressing was amazing!

One evening each week we put on our Barbecue spectacular, with a wide range of Boucan specialities to try - glad you enjoyed.

“Unique and good...service fell a little short”

We came here for dinner and had the best experience ever. What a unique concept! So much originality with the menu and the open kitchen is impressive. We came back for lunch and even though the food did not disappoint, the service fell short. The two servers we had were total zeros and weren't able to answer any questions about the menu, plus, they were not very nice and acted like they didn't understand what we wanted. I'm happy to say that the manager corrected the problem immediately and took them aside for a long speech. For the remainder of the meal they were no where near us, which worked great! Desserts here are the of course amazing, but my favorite is the trio of chocolate, cocoa nib butter and olive oil with cocoa nibs that comes out in the beginning with your bread. Truly delicious!

“Great Atmosphere”

My husband and I visited Boucan for dinner during our honeymoon in Soufriere.

While he wasn't absolutely wowed by the food, we were both perfectly pleased with the atmosphere. It started with the mineral water. He turned towards me and said 'does this have a slight...chocolate taste?!" We couldn't believe it! The chocolate theme really does resonate throughout the meal but not in an annoying way.

There was a musician playing throughout the night and that created a romantic atmosphere.

The food presentation was beautiful. Service was very good but they asked if we wanted them to pour our wine which we said yes to but then they never monitored our glasses and we ended up pouring our own. Minor detail.

We stayed for a while after dinner and finished our wine in the lounge area while listening to the music. We danced to a few songs. It was wonderful.

If the food lived up to the hype, we would have given it 5 stars!

“Amazing and awful at the same time”

After spending 10 days at a resort where we had a meal plan, we were in need of a change. Our family of 4 decided to try Boucan for dinner.

I would give a rating of 2.5 but thats isn't an option.

The evening started out amazing then went downhill. The setting and restaurant decor are fantastic. The amuse bouche was a coconut soup and the breads with dip were spectacular!! really amazing. We ordered 3 appetizers - the salad (the dressing was out of this world !). We also had the risotto which was very good and the chicken sate. After we finished our appetizers, with everyone tasting each others choices, we started making plans for a return visit.

When it came time to order our mains, we inquired with the waitress on what her favorite dishes were or what got the best reviews, but she did not offer any suggestions just shrugged her shoulders and said "um, i dont know". Without any suggestions from her we ordered 2 orders of chicken curry, 1 hot pot and the pork. When I ordered the pork for my daughter I requested it to be well done. The waitress said it was served well done so not to worry.

The main dishes arrived to great anticipation. The hot pot was really good no complaints. The chicken curry broth had good flavor but one order of the naan bread was completely raw in the middle and the potatoes weren't cooked. Also, the chicken was very spongy (tasted like chicken cooked from a frozen state). Lastly the pork was completely pink. Now I would have given the kitchen the opportunity to correct these issues but we never saw the wait staff again til it was time to clear dishes. My daughter ate 2/5 of the pork (eating the cooked edges) and I shared my cooked naan with my other daughter. When the staff arrived to clear the plates, no one asked how the mains were. Although it was obvious 3 out of the 4 dishes were not eaten and each staff member looked at one another but nothing said. Finally, one of the wait staff clearing the pork dish noticed the pork wasn't eaten and she said "not good? And I replied too raw". She shrugged her shoulders and left with the plate. At this point we didn't know whether to say anything or not as it was obvious that the staff recognized there was a problem but no one either knew what to do, or cared that we didn't eat our food.

Hoping to erase our disappointment, it was dessert time, being chocolate fans we were anxious to have some good chocolate desserts. We ordered a bean to Boucan tasting plate which was really good, rich and filling. My husband ordered the molten cake but unfortunately it came out burnt but again no one checked on us and considering it took 15 minutes to prepare, we weren't prepared to wait for another one so my husband ate the middle around the the burnt blackened edges. Again it would have been obvious that there was a problem with the dessert but AGAIN the wait staff cleared the dishes and said nothing. Not once were we asked during the meal if everything was okay - not once! My husband tried to complain when they picked up the dessert dishes but it was like he spoke a foreign language and the staff basically ran away while he was trying to discuss the issues we had. Like I said, it would have been obvious there was a problem but the staff chose to ignore them. Our taxi was waiting so we got our $300 bill (no alcohol ) reluctantly paid it and left with a bad taste in our mouth.
