Description: Perched high up between the Piton mountains, The Boucan Restaraunt is open to both residents and non residents. Boucan is The Hotel Chocolat’s own restaurant, where guests can experience Cacao Cuisine. The word “Boucan” refers to the traditional West Indian name for a cocoa drying facility. The restaurant is built on the site of the Rabot Estate’s original Boucan. Boucan is also linked to “boucaneer” or “buccaneer,” the local pirates that would smoke and dry their food to preserve it for long trips at sea. The Boucan offers a strong connection with cacao and chocolate. For over 3,000 years, cacao has been used as a savory ingredient and for 500 as a sweet ingredient. The menu explores both, with the chefs taking their inspiration from the fresh cacao growing all around the estate, together with amazing local fish and seafood, salad leaves, vegetables and plentiful fruit. However the cuisine is far from cocoa heavy. The menu often makes use of cacao as a light, subtle spice or as an infusion. The desserts make full and imaginative use of the estate cacao, with each evening meal rounded off with the day’s new chocolate creation. Boucan’s breathtaking minimalist design includes a soaring roof inspired by the shape of the cacao tree, with its branches reaching to the sky, and shaded by the lush rainforest canopy. Its high platform is a centre stage for the Big Nature views all around.Dining at the Hotel Chocolat's Boucan Restaurant, whether it be breakfast, lunch, dinner or the fabulous sundowner cocktails, is an experience to be shared and cherished.We passionately believe we are certainly offering something very different at Boucan. The dress code is smart/casual and ladies a cocktail dress is never out of place!

As part of our day trip to Soufriere we stopped and had lunch at Hotel Chocolat and I'm so happy we chose this restaurant. The views were stunning, the location beautiful and the food was so tasty, really unique use of chocolate throughout the whole meal. The staff were friendly and attentive and we could have sat there all day quite happily. All round a really good experience and one we will remember always

“Great experience!”

We visited the Rabot Estate during our holiday to St Lucia, and dined at the Boucan for lunch - WOW! The menu was interesting, the food delicious and freshly prepared in one corner as you sit with a wonderful view/backdrop of the Pitons. One of my favourite memories of our St Lucian trip........

“Great service and food in St Lucia!”

We ate here on our second night in St Lucia, staying close by at Jalousie and were delighted by what we found. After a few boring meals at Jalousie with poor service (having to ask for things three times before they were brought, ie drinks, etc) we drove our rental car just down the road to Boucan. We ended up here twice in five nights and might have been more had we not been compelled to try other spots nearby. The menu was diverse and we had a tough time choosing both times. Over our two nights we had the kingifsh special twice, with bacon infused lentils and mashed potatoes, the curried chicken with homemade naan, and the pork tenderloin. Presentation was artistic and the flavors fantastic. Everything appeared fresh and the staff would tag team to ensure excellent service, a tough thing to find on St Lucia. Drinks and f course dessert were all top notch and it was fun to see the chefs preparing the food. Top flight restaurant and worthy of your business.
