There is no question: Le Gaiac is THE best food on St. Barths. We've been coming to the island for 20 years; we've eaten at every restaurant. We've paid too much money too many times for mediocre food. Le Gaiac is at a "whole, nutha' level."
This review is not going to describe a specific dish. We come at least 2x / year (out of a 2-week stay), and the menu is different each time (save for the "fish night", which is locally caught fish, presented for your choice, then prepared amazingly). To write that we "loved X" would only mean you'd be excited about X, and it might not be available when you get there.
Instead, accept my prose. Starting by saying that every time we we dine here, we have food we are agape over. Chef Mazieres deserves at least one, if not two Micheln stars. Too bad the Michelin people don't get down here enough. The presentation, the flavors, the preparation, the venue - all exhibit food mastery.
No "quality ingredients, prepared simply" here. Chef practices what Escoffier discovered: that there can be more to food if you cook good ingredients once, do something with that, cook it again, blend it, contrast it with something complementary, and otherwise bring out the best in what's possible with food. Cooking in the hands of a chef like this is like enjoying the most approachable art, presented to regular people like me to enjoy the skills of a master.
We've had entre's (appetizers for you non-french-speaking) of vertically-adjacent cylinders of expressive seafood mousse, served on a slate platter edged with two rows of decorative dots from a sauce that probably took as much time to create as the mousse.
Our bouches have been incredibly amused.
Main courses of fish serve, in ways I've never dreamed - foamed, souped, rolled, mashed, you name it. Sauces that exhibit sweetness, sourness, floral tones, the scent of the sea.
And there's always a terrific sommelier to guide you with wine. Name a price & things you like (talk about the character, not the brand - e.g. how much minerality, how sweet / dry, ...). He/she will find you a dream wine.
OR, go with a multi-course fixed-fare, and add the wine pairings. We now almost always do - and are amazed. We discover wines we'd never have thought of drinking, and get a NICE pour of each.
Yes, it's amazing food. Presented beautifully.
Ok, yes, you're going to spend some money when you go there. Settle down - it's really only a few tens of extra bucks / euro. You spent thousands to get, and stay here, and you're going to have one of the meals of your life at Le Gaiac. Forget about the difference in price and ENJOY a fabulous meal.
One thing: The locale can be a bit breezy. So ladies, you won't be cold - but it wouldn't hurt to bring a light wrap just in case. And at night (vs. lunch), you'll be staring at the dark of ocean, with a lit pool in front of you. Wonderfully romantic.
I can NOT recommend any restaurant on St. Barths more highly - for food. Others are fun for other reasons; La Plage for beachside restaurant with DJ. Etc.
But if you're a foodie & on St. Barths, Le Gaiac is a mecca to which you must come - and just immerse yourself in its excellence.
