Pikayo in the Conrad Hilton Hotel combines all the qualities one wishes for celebratory and romantic dining. The cuisine is continental with a Caribean touch. Fine wines and champagnes by the bottle or by the glass, allow for changes to accompany each course. The hors d'oeuvres and salads were original variations of classics. For example, there was a Caesar salad with "arroz pegao" (the crispy crust from the bottom of the rice pan) in place of the ordinary croutons. The fennel and arugula salad with manchego cheese and truffle oil vinaigrette was a gourmet treat. One of us loved the pumpkin cream soup, whereas the other found it too heavy on the cream. Fish was done to perfection -- the halibut, which was the catch of the day and served on a bed of rapini was outstanding. The king salmon with red onion compote and mustard beurre blanc was also delicious and went well with a fine Spanish rioja. The cheese flan for dessert was very good, but we still prefer the classic custardy version. What was most surprising was the fact that very large staff of waiters and busboys seemed to be at everyone's disposal. They simply watched to see what table needed serving, clearing or assistance. How they kept track, I cannot imagine. But everything was smooth as clockwork. If a glass of water was empty, it was almost immediately refilled. If a wine glass went down, someone asked if one wanted more or something else. And all of this was done in an unobtrusive manner. We never felt rushed, and though the staff was attentive, they never hovered. The maître d’ came over once in the middle of the meal to ask if everything was fine and then left us to our romantic selves. We ate à l’européene -- slowly -- and were never rushed. Pikayo is pricey, but not exhorbitant, and one comes away feeling that one has had one's money's worth.
