Simply the best experience in Puerto Rico, the 5 course set menu for $59 was the best value I have ever seen for a restaurant of this caliber...Don't miss this place on your next stop to old san juan.

We visited here last week

lol
I give it a 11 out of 10!
This restaurant is a real find. It is quite expensive but well worth it. The food was beautifully presented and extremely good.
From the menu we chose Paella Bites (crispy rolls of sushi-esque flavoured spiced chorizo rice scented with smoked chicken, peppers and a saffron-garlic emulsion and a crab cerviche as starters, followed by strips of fillet of duck with a stuffing of blue cheese and apples and Greenland Halibut wrapped in parma ham. Our puddings were also excellent.
There is an extensive wine list, but what we found particularly impressive was that the somelier suggested a different glass of wine to go with each course - the most memorable one was from Spain made from Godello grapes.
There is a 10 course tasting menu available from Sunday to Wednesday, which we will be returning to sample.
The cocktail bar and restaurant are very attractive with a grand high cieling and a very chic interior design. It is also very popular with the locals, judging by those that were filling the restaurant.
Each year for the past three years we have been rewarded by selecting Marmalade for dining at least once in our stays. Chef owner Peter Schintler, who commonly interacts with customers (now with charming wife often on site and newly as a proud papa), heads up a welcoming atmosphere and presents diverse and superbly crafted offerings. Expect a creative melding of flavors. Some of which may be a concept dish, since Peter will open a second store in Condado, called Jam, in a few months. This we learned just today. Highly recommend the signature white bean soup, the truffle infused pasta, the provencale-like snapper fish soup with its novel preparation and presentation, and the creme brulee ala marmalade. The wait staff is knowledgable and as personable as Peter. The five or ten taste menu with wine pairing option should always be considered. The pairings exquisitely complement each offering. In our experience, should you dine ala carte, the sommelier will match any dish with an appropriate wine. Many wines are available by the glass.
Creme Brulee was AMAZING, best I've had in years. The sugary crust was thick and stayed crisp until it was gone, and the foam & ice cream (tres leche? Coca cola? who knows) they added was a great touch. The donuts & raspberry chocolate sauce was also excellent, but the apples & granola was simply well executed (done right, but not a stunning result like the others).
Watch out for the white devil cocktail, it wasn't to my taste, but they had a lot of cool drinks. You can request a raspberry mojito (it's not on the menu) and that was excellent.
