Just got back from a 5 night trip at the Marriott Stellaris. Wanted put a couple things out there before I forgot. Overall the hotel was very nice. I guess the lobby has been renovated and you could tell it looked brand new. Check in was a breeze and we were actually upgraded for free. They are still working on the lobby bar but you don't really notice anything. We had a partial ocean view room that was newly renovated as well. The new furnishings are nice, especially the +40" flat screen tv, but you could kind of tell they whipped through the process as the grout work was shabby and some of the furnishings were loose. Very small inconveniences but just things I noticed. Overall the rooms are very impressive though. The bed was incredibly comfortable and the bathrooms are huge.
The grounds were equally impressive with a nice pool area (swim up bar!) and plenty of chairs with umbrellas for those that wanted them. The beach area was well kept and there were enough palapas for everyone. I guess you can reserve them ahead of time for $15 or just go in the morning and save one. I just went in the morning and managed to get a palapa in the first or second row each time. But if you want to sleep in until 10AM I would suggest paying the cash to have a nice one up front.
I never had breakfast at the hotel. The lobby shop had coffee, juice, muffins, etc. but they were incredibly overpriced and not that appetizing. I would suggest walking a short distance to another restaurant for breakfast. Lunch was reasonable compared to other places but again nothing to fancy. We'd usually take lunch time to go walk around and sample other places.
We had dinner one night at Simply Fish and it was an incredible experience. We had a table about 10 feet from the water's edge and watched the sunset. The service was fantastic as our waiter made thoughtful suggestions and gave us local news on the island after we asked him what was happening. The food was delicious and portions were big enough that my wife had to box up her meal. Dessert was just ok but to be honest it was worth it just to kill some more time under the stars. This was probably our most expensive meal on the island but it was worth it for the experience. Highly recommended.
Overall, we had a great time at the Marriott and would happily return. We walked through other hotels as a comparison and the only other one in the High Rise section that looked comparable was the Hyatt (actually was nicer but was all booked up).
