First off, we are a couple in our early 30's, which fits in with this resort's demographic of primarily middle aged and young professional couples. There were a few younger people there but this isn't a typical party-type resort, so it was quite quiet most of the time.
Food: Overall the food was ok for the most part, the fish was fresh, we ate mostly fish while we were there, it's an island so if you eat fish, take advantage while you are there. The grilled fish at the beach bar was excellent, Nelson (the egg man) makes a pretty good omlette in the morning, so take advantage of that.
Hotel: was everything we expected in a hotel. Our room was on the second by the tennis courts and was nice and quiet. Nothing was over the top, but everything we needed was provided. Grounds and rooms were kept very clean. The jacuzzi was a little small and always had people in it, they could have used another one, but it wasn't that bad. The bartenders in the piano bar are the best at the resort, make a really good spanish coffee. The lobby is an excellent place to hang out and have a coffee. The beach-side massage is very good, but book early as they fill up quickly. Also if you like a particular massage oil, bring it with you as there is only one option. Canadian health stores have a good range that you may prefer.
Scooter trips: We went on 4 scooter trips, of those, the Hershey and Bacunayagua trips are the best, the pina coladas are really good at bacunayagua and on the highway on the way to Santa cruz. The guys at the scooter rental (Fidel, Osmin, and Orlando) are really friendly. Orlando also speaks russian, which may be an advantage. We had a problem with our scooter (just a fouled spark plug) and they had the problem fixed in about 5 minutes. Cuban mechanics deserve a medal. We brought stationary with us for kids, we asked our guide to stop at a school and he was very accomodating, and the kids were very appreciative. We brought about 6-12 packs of pencils (and notebooks, pens, markers) and the kids huddled in the school yard to divide them up. It was pretty nice.
Jeep trip: We took the Jeep nature tour, which was very nice, Mabel was our driver and provided a very interesting view of Cuba. She answered all of our questions and was very accomodating. Her English was excellent. We went swimming in a cave, which was very nice, went into a huge cave system, and went to a coffee plantation. We ended the day with a pina colada, and it was very nice.
Havana: we took a taxi into Havana. Juan Carlos #1 was our driver and was very nice. We read about him on Trip advisor and asked for him when we booked the cab. He was very good. We forgot our camera bag in his car and he returned it to the resort the next day. He was very good. Ask him for the typical tour, which includes a stop at the old military base (reminded me of the citadel in Quebec city), a stop at the ice cream parlour, revolution square, the grave yard, the capital building, the floridita (it's a tourist trap, we walked in, and walked right out and i'm a huge Hemmingway fan) then we went for some lunch. We went to a restaurant that Juan Carlos recommended but it was full, so we went downstairs to "el Guajirito" which served excellent fish and had wonderful dancing and singing on the stage.
