I visited the Rice Terraces with a private guide, (Guilin Andy), who I would recommend, in order to take photographs, for keen photographers this place is a must if you're visiting Guilin or the surrounding area.
I did visit one of the minority villages on the way, I must admit it wasn't really my thing, the locals were primarily concerned with flogging you tourist tatt, although the houses and other building were interesting and we only stayed about half an hour.
The walk isn't too steep and I would imagine for most people the walk / climb would be manageable.
Now to the important bit, the view, excellent, breathtaking, beautiful, well worth the climb and the trip and a welcome relief from, commercial and crowded Guilin. Overall a very enjoyable day, that I would recommend to anyone.
