I've been to ST twice, once for 2 weeks, once for a month, LOVE IT!
Are there other places you know of that resemble the:
beautiful and surfable beaches,
remote and seemingly undiscovered yet populated with great restaurants, shops and friendly people (BARELY touristy)
jungle / 4 wheel exploration
english speaking
70 - 80's in Jan/Feb
any suggestions would be very helpful!!
Dominical is pretty cool, not over developed, I think it is a bit hotter than 70 - 80 but has good surfing, thats the first place that pops into my head. Uvita and the whales tail is something to see.
Cool thing about CR is how many different little places you will find. You may find some similarities from here to there but just about every inch is worth exploring.

Matapalo beach by OSA...by Puerto Jimenez...you can hardly can find such a nice beach...and most of the time all yours...
Also Drakes bay...
In Uvita check Tikivillas...incredible nice ...some great ocean views...from the main lobby you can see...Caño Island!

Anything outside of beautiful Costa Rica?
interesting question, having travelled very widely I would say "NO" !!!!
I returned from my first visit two days ago and am itching to go back. It's that type of place with a laid back casual lifestyle and still relatively undeveloped i.e. the opposite of Senor Frogs and Cancun! If I was you I would head back there.
The only other alternatives i can think of are:
Transcoco Brasil
Canoa Quebrada Brasil
Jericoacoara Brasil
i am interested in your experience at santa teresa. where did you stay? what types of non-surfing activities are there? is the main area with restaurants and whatnot walkable from the nicer hotels?
Playa Ganuza in Cuba, still have fond memories of this little unknown beach! But Punta Uva is incredible too.
