We're thinking of a couple of nights in Ventura before visiting LA.
I've had a look at the weather websites and the expected temperature wasn't quite as high as I'd of thought.
My question is will it be hot enough at some time during the day for my good lady to laze by the pool?

May and June can be foggy. If you are coming form the north Pismo Beach will be sunny when the rest of the Central Coast has fog. It's hard to say, the normal temperatures in May are around 70 degrees in the daytime. If you were inland a little, like Ojai, the temperatures go up dramatically. Remember the Pacific is very cold here, so the further inland you go, the higher the temperatures will be.
