I'm not too familiar with how bookings work in the US so just want to check something. We may have to drop SF from our itinerary altogether, do we just let our hotel know that we're cancelling and that's it?
We haven't paid a deposit or anything like that.

IF you booked the hotel on the hotel's own web site then I'd just go to your booking and cancel it. IF you booked on a 3rd party site then you go to that site and cancel. Hopefully you have read the cancellation policy of the site on which you booked?? They are not all the same.

If you have not paid nor secured your reservation with a credit card, you should either cancel online and get a cancellation number or call and cancel. If they have no card info from you, it is just good business practice to cancel it instead of a no show. If you did give a credit card, and you have to call then, please get the cancellation number and name of agent.
I do hope, however, that you do not have to cancel San Francisco from your itinerary. You would miss a beautiful city.
