I know this isn't a direct answer to your question, but hopefully, it'll give you some information to help you make your decision.

If you're talking the Trinity Rail Express (TRE) commuter train between Dallas and Ft Worth, it'll require a taxi from the and back to the Gaylord, a taxi will not likely be waiting at the station for your return, the TRE does not keep a Sunday schedule, nor does it run past around 10pm. Once in FW, you'll need to take a bus or taxi between downtown FW and the Stockyards.

If you're talking about the Vintage Rail between Grapevine and the Stockyards - round trip is about $30, I think it only runs on weekends and you'll only have maybe 2 hours in the stockyards - however, relative to it truly being an old, restored train, it would be a leisurely ride directly into the stockyards.
