Two places come immediately to mind; Manzanita and Yachats.
Manzanita is a small north coast community about 15 miles south of Cannon Beach. VERY pretty, sits on one of the longest and widest beaches in Oregon and for it's size, there are a TON of vacation rentals. VRBO.com is a good source, but so is this website:
Yachats sits about 25 miles north of Florence and sits on what I consider to be the best real estate in Oregon. The town itself sits on a low, rocky bluff, but there is a developed (and historic) trail that runs from one end of town to the other and connects with a long, wide beach just north of town.

imo manzanita over yachats
This group talked me into going to Manzanita, now our favorite place on north coast. We used to prefer Seaside, cause Cannon Beach a bit spendy.
Central coast for beaches we go to Newport. Though beach access better in Lincoln City. We like newport better for things other than beach, like bay waterfront.
Edited: 5:18 pm, November 30, 2012Neskowin (about 10-15 miles north of Lincoln City) is still a somewhat unknown treasure. There are a few condo and small hotel properties right on the beach, plus lots of private rental properties. It's one of our favorite getaways -- long, extremely walkable beach and not nearly as crowded as most other options.
Both Yachats and Manzanita are very small, pleasant towns. Yachats perhaps has the edge in overall scenery as it's a bit more "open" geographically. Both have some good places to eat right in town plus a moderate-sized grocery store. Both are close to other areas with interesting attractions, and within a half hour of a much larger town.
Neskowin is also very pleasant but with the exception of I believe one cafe, you will need to drive to eat, and that puts you in very congested Lincoln City :-(
Just depends upon what you want for your vacation, but this will give you a start for your research!
Oh another thought might be Oceanside. It's a little more isolated but also small and attractive.
We prefer the Shorewalk condo at Neskowin -- it's privately owned and you can rent direct through their website. You can choose a 1- or 2-bedroom configuration. Very reasonable prices and it has everything you have at home. We bring our own food, but the owners often have breakfast fixings (pancake mix, etc) available for your use.
Lincoln City and Pacific City are about 15 minutes away by car if you choose to dine out. Don't know the current status of the (previously excellent) Hawk Creek Cafe that was sold earlier this year. It offered perhaps the best cinnamon rolls and wood-fired pizza on the Oregon Coast, and was literally a few yards from the condo.
