Gluten free dining in PCB?

We are going to be down there for Thanksgiving and we'll be in a condo so we'll prepare most of our meals there. However, we want to go out to a nice restaurant for a gourmet meal while there. I have Celiac and can't eat gluten. I'd normally ask the local support group where to eat but there is no support group there because there are no doctors there that know how to diangose Celiac correctly. However, many Canadians vacation there in the winter and that country has a fairly large number of people with Celiac so some of them are surely going out and asking for gluten free meals down there.

We're not interested in going to a chain with a gltuen free menu (we have Outback's, Carabba's and PF Changs here - no thanks). Most high end places have real Chefs that know what gluten is. In fact, several Chefs from Atlanta are down there now. Does anyone know of a great place there that can offer a gluten free gourmet meal? Not looking for a plain piece of fish and baked potato but am happy to spend $100+ (for two) for a true dining experience with creative, gluten free dishes. Thanks if anyone knows what I'm talking about.

I know I said we didn't want to go to a chain but Margaritaville is developing a gluten free menu and they will have it even at the PCB location! The GF menu will likely not be ready by the time we are there but the Chef there is familiar with gluten and safe food prep for those with a gluten allergy. He's happy to accomodate us with advanced warning.

I was raised in the FL panhandle and my whole life we joked that our part of the world was five years behind every place else. It would appear from the lack of replies to my request on this topic that this is true of Celiac and PC as well. As a matter of fact, I found out that the Celiac specialist up here says she sees a lot of people from the panhandle of FL....they drive to Atlanta to see her and she doesn't even take insurance! Sounds crazy to me but the average dx in the US is nine years and it appears to take about 20 years at places like PC!

www.celiaccentral.org is a great site for people who think they have a problem with gluten - 1 in 100 in the US do.
