As a child I went to either Comfort inn or Quality Inn in Daytona Beach 3 years in the row in the late 90's. The restaurants in those hotels used to serve Russian style buffet foods. Does anybody know if those places are still in existence?
I've never heard of any Russian style restaurants in Daytona Beach. You might want to check Palm Coast, 30 minutes North of Daytona. It has a large Ukrainian community. I know it's not Russian, but they might have a restaurant that would be similar.
The closest you are going to find in this area is the European Cafe and Schnitzel House in Ormond Beach. Their Menu looks like a mix of German and Polish food. They list Polish pierogis, cabbage rolls, potato pancakes, etc.
