You may want to check the Florida Today newspaper. I have a feeling that Lou's Blues down the street from your hotel will be pretty happening.

There are a bunch of places downtown too.

If you want a lower key kind of place. There is a pub called Coasters in the Winn Dixie plaza very close to your hotel that has good food and a good beer selection too.

The Hilton should be having a party, also the Crown Plaza usually has something and the Hilton Rialto across the causeway does a dinner buffet / dance usually every year. Downtown Melbourne will have stuff going on. Lou's Blues is very popular and will be very crowded but at least you would not have to worry about drinking and driving! Same with Coasters as its not far from the Hilton. City Tropics on 5th Ave, Sands on the Beach, the old Cove (not sure of the new name), all should have something happening. Florida Today has a TGIF section with goings on, the Zap Squad does a section online with reviews, etc, might find some info there. Brevardlive.com also has info.
