Mt. Hermon is a Christian camp. As far as I know, they do groups, not individuals. But here is the part of their website that describes the "Canopy Tours" and a way to contact them to find out for sure.

As for eating near the Boardwalk. There are several seafood restaurants on the nearby Municipal Wharf, most of them pretty much alike and most of them with views.
Locals like Riva. It's fairly small and doesn't take reservations or credit cards. One review says that it was sold last year and the service has gone way down.
The most upscale on the Wharf is Olita's Cantina and Grille. You can get a lobster quesadilla, for example.
There are much better dining choices on Pacific Avenue, which is just a few blocks from the Boardwalk. Lots of restaurnts, most of them with sidewalk seating as well as indoors.
