For Mexican food in Mesa, I recommend Rancho de Tia Rosa. We take all our visiting family there. Here is the URL for their website.

I love Blue Adobe Grill, on Country Club, about 1/2 way between University and Main St. They call themselves, "New Mexican," food.

Matta's Mexican used to be good, I just found that they closed their downtown Mesa location, and are now out at Higley/Brown.

I second Tia Rosa, its my favorite.

But, Los Dos Molinos is pretty famous around here for their spicy salsa.
