Well, all restaurants, hoteles, tours, etc, etc, are going to be fully booked. My recommendation is to confirm reservation in advance.

All beaches will be jammed that weekend, so have reservations, period.

Waterfalls and hikes will open every day. Cabo Blanco is closed Monday/Tuesday.
Make reservations for hotels and for for New Year's eve meals in advance (that might be limited and a few places will probably do something organized (Organico, Ylang Ylang, ...).
