Which activities need to be booked in advance?

Thanks to all the great advice on these forums we have booked our trip to Costa Rica for the week of December 22nd to December 29th. We will be staying by the airport the first night then the Arenal area the rest of the trip. I decided which excursions we are going to do (obviously dependent on weather and other factors at the time). Would like some flexibility while there based on weather, but also want to pre-book anything that would be at risk of not being available when we get there (it is Christmas week). These are the activities we are planning, any advise on which do or don't need to be pre-booked would be appreciated.

Volcan Poas (assume no pre-booking, just going to see the overlook)

La Paz (not sure?)

Proyecto Asis Animal Rescue (assume I should pre-book)

Desafio Level II/III White Water Rafting (assume pre-book)

Short hike to La Fortuna Waterfall (nothing to pre-book)

Sky Trek Zip Line and Bridges (pre-book?)

Arenal Hanging Bridges (pre-book?)

Visit one of the hotels with the more elaborate hot springs one evening (pre-book?)

That is probably all we will have time for, but would like to see Lake Arenal and maybe Kayak (Desafio). If we can fit that in assume we would have to pre-book?
