Koh Samet is about 2 hours away (at least 30 min more than Pattaya). Koh Chang about 5 hours. On top of that you need time to wait for the ferry, ride it and then take local transportation to your accommodation. One additional hour should be enough unless you are unlucky with the ferry schedules.

One night will be awfully rushed if your flight arrives in the afternoon and the outgoing flight leaves in the early afternoon or before. Basically you would not be able to have any beach time during the daylight hours.

Both islands are supposed to have pretty nice beaches and not to be totally packed with bars, restaurants and other entertainments for tourists. Good for a few days relaxing getaways but somewhat boring beyond that.

If you really have only one night, why is Pattaya not an option? You can have your time on a good beach by taking the ferry to Koh Larn, which is at least as good as the beach we had at our hotel on Koh Samet. If you dislike the liveliness of the night life, stay in southern Jomtien Beach or in North Pattaya.

Hua Hin is a very easy couple of hours south of Bangkok, nice town that still retains a Thai feel with a laid back vibe, but for 1 night hardly worth the effort - just find a good hotel in Bangkok with a great pool!
