First, I would suggest lunch then. Even then, Gion is overpriced in most of the restaurants relative to what you are served. Many restaurants are by invitation only or if you are a regular customer at that establishment. I would suggest instead restaurants nearby rather than in Gion itself.

Depends on what type of food you are interested in, 'authentic & local' is a category hard to pin down. There are many styles of Japanese cuisine. Gion has fine dining ryotei - serving traditional Kyoto kaiseki ( as above, it can be difficult to get reservations); there are also more contemporary fine dining that combine Japanese tradition & local ingrediants with international cooking styles. Gion has some excellent contemporary restaurants but few are cheap.

I would agree lunch is a better option to try good food - especially kaiseki - if you are on a budget.

Or there's food that accompanies drink (Gion is about entertainment afterall) equally authentic & local yakitori, kushikatsu & izakaya dining too. (It's not all cobblestone streets & wooden buidlings, garishly lit clubs, drunks on the street, & pachinko are here too)

You may want to read about Kyoto dining options (don't limit yourself to Gion) there are many choices all over the city. some useful websites:
