Two things:

1. Which Sheraton - there's two?

2. 99% of the answers to the stream of consciousness above are already on here; some are even on the same page of the forum.

In the search box above, do the following:

1. Type wild wadi then click Go

After perusing the wealth of information

2. Type safari then click Go

After a further 20 minutes of reading all the info thus obtained

3. Type abra and click Go

Get the picture?

For restaurants go to Time Out Dubai which can be found from Google by searching those 3 words. Searching on the word restaurants on here will also bring up some gems.

Global Village is only open from the beginning of the shopping festival, which is next year, so that's one thing you can strike off your list.

You should also google up Nad Al Sheba to see if the racing season has started when you get here. They've got an excellent website and will show restaurants/cuisine.

Most tourists/Europeans don't use bus service. Apparently, it's very good, but waiting out under the midday sun isn't much fun and you probably won't enjoy the people you end up sitting with. Taxis here are cheap, reliable and there's loads of them.

Horse racing doesn't start until November so there is no point in going to Nad Al Sheba Club (unless you want to play golf). Save your shopping for Bangkok - its cheaper and there's more choice. Although you should try and visit City Centre whilst in Dubai - it's air conditioned and all the high street shops and food courts.

A word of warning, it is still extremely hot here at the end of September and you won't want to be walking around during the day. Do the abra crossing at night (after 6.30pm) from Dubai to Deira to see the gold and spice souk and other way around (depending which Sheraton you're at - there are a few) to see the newly renovated historical area, some nice cafes. Also go to the Dubai Museum in that area, well worth a look (open in daytime only).
