Hong Kong is very safe...should't be a problem travelling on your own...i recommend the bus ride from Central's Exchange station which is quite near IFC ... i think it is Bus 16 something...they have a few BUS 16 from that terminus going to Stanley and Repulse Bay...the bus route is very scenic as it will go up the peak....bus ride is about 45 mins to stanely from central...highly recommend this...sit on the left on the bus on the double-deck level, very good panoramic view...use Octopus Pass to travel on public transport, very convenient.
The walking trail on Victoria Peak as suggested by the HKTA is also very good...less than 2 hours...air is much cooler up on the Peak too...i took the tram to the peak and walked down the walking trail to the HOng Kong University...i walked on saturday, i think weekends are better to walk alone, more local people will be exercising via this walking trail too, and i saw quite a few people walking their dogs too :) at least about 4 that saturday afternoon.
You shouldn't miss the Mid-Levels Escalator which you can ride on, at Central...if you are into a walking tour....very interesting architecture in that area...very crammed buildings all built close to each other but each having their own character somehow...pretty cosy and nice eateries, cafes and pubs in SoHo and Lan Kwai Fong area too. I suggest a late afternoon walk there and you can break to see the shops in the evening...some pretty bohemian...then dinner and drinks.
