Before you rush to buy those cheap flights, you should look into the cost of accommodation. Prices may be rather higher than you are used to, or expect.
You say you want a non-city location. That gives you three options, in no particular order:
(a) kibbutz guest house - actually a hotel, run by a kibbutz as a commercial venture, you won't be eating with the kibbutz members in their dining room or anything like that (not that many kibbutz members do that themselves these days);
(b) a private guest house, usually overpriced for what they are;
(c) a hostel. Don't be put off by that word. The hostels are of a very high standard and have twin rooms. See here:
